Originally hailing from Switzerland, Bircher Muesli has journeyed far beyond its roots becoming a beloved dish across countries, continents, and cultures. For our family, this recipe comes with a special twist, gifted to us by dear friends from New Zealand, Sam and Maria. It quickly became a breakfast staple, and my youngest son couldn’t go a day without it for years!
What makes Bircher Muesli so wonderful is its simplicity, speed, and adaptability. While you can soak the oats overnight, I often find that by the time you mix them with juice and prepare the rest of the ingredients, the oats have already softened to perfection. Adding a variety of seeds elevates this dish, boosting its nutritional value with extra minerals and protein, setting you up for a balanced and satisfying start to the day. Whether you prefer plant-based yogurt or milk alternatives, or you decide to indulge with a splash of cream, this recipe is easily tailored to your taste.
Ingredients
2 cups old-fashioned rolled oats
1 cup apple juice (or orange juice)
1 cup coarsely grated apple
1 Tbsp chia seeds
1 Tbsp ground flax seeds
1 Tbsp hulled hemp seeds
2 Tbsp chopped walnuts
½ cup natural yogurt
Juice of 1 lemon
Optional: 2 Tbsp chopped dried cherries, blueberries, or raisins
Instructions
Start by soaking the oats and chia seeds in apple juice (or a mix of apple and orange juice with water if you prefer a lighter flavor).
Mix in all the remaining ingredients, ensuring everything is evenly combined.
For an added burst of flavor, toss in some raisins or dried fruit—they'll plump up beautifully as they soak in the liquid.
Serve as is, or top with fresh berries and sliced stone fruit for a colorful, refreshing finish.
